  • Sirloin, New York Strip, or Ribeye steak cut about 1 to 1 1/2 inch thick
  • kosher salt
  • pepper
  • vegetable or canola oil


  • cast iron skillet


  1. Take steak out of refrigerator and allow to come to about room temperature
  2. Preheat oven to 500º with cast iron skillet inside
  3. Lube both sides with vegetable oil
  4. Season liberally with kosher salt and pepper
  5. massage spices into the meat
  6. allow to sit for 15 minutes
  7. After oven is preheated, remove cast iron skillet from oven and place over high heat on stove for 3-5 minutes
  8. Place steak on skillet and do not move
  9. Cook steak on skillet each side for 30 seconds
  10. Place steak in oven and cook each side for 2 minutes
  11. Remove steak from oven and place on upside down plate (on top of another plate) to allow juices to drain off
  12. Cover with aluminum foil or cast iron bowl
  13. Allow to rest for 5 min before serving
