Ingredients- Sirloin, New York Strip, or Ribeye steak cut about 1 to 1 1/2 inch thick
- kosher salt
- pepper
- vegetable or canola oil
HardwareDirections- Take steak out of refrigerator and allow to come to about room temperature
- Preheat oven to 500º with cast iron skillet inside
- Lube both sides with vegetable oil
- Season liberally with kosher salt and pepper
- massage spices into the meat
- allow to sit for 15 minutes
- After oven is preheated, remove cast iron skillet from oven and place over high heat on stove for 3-5 minutes
- Place steak on skillet and do not move
- Cook steak on skillet each side for 30 seconds
- Place steak in oven and cook each side for 2 minutes
- Remove steak from oven and place on upside down plate (on top of another plate) to allow juices to drain off
- Cover with aluminum foil or cast iron bowl
- Allow to rest for 5 min before serving
